The Botanical Profile of Red Juniper
Juniper berries, the seed cones of various juniper species, are typically associated with their sharp, piney taste, which is a hallmark of black juniper. Red juniper, however, presents a different botanical profile. This variety is characterized by a softer, less resinous flavour that makes it an exciting new option for us when distilling gin.
The flavour of red juniper is where it truly stands apart. While black juniper imparts a strong, piney taste, red juniper offers a subtler sweeter profile which is similar to a stone fruit profile, such as plum or black and red cherry.
Red juniper brings unexpected sweeter (fruit sweet, not sugar sweet) note to our gin. When distilled with cardamom, bilberry, golden berry, olive, leaf, and almond, the flavours combine to enhance and build the complexity of this gin.
